While researching the Marshall Island stamps I learned much about the overprinted stamps.
I have a weird question...Does anyone know or have a link to the number of islands where
the German`s used overprinted stamps while having control of the islands?

I am not sure if I understand your question. Do you mean on which of the Marshall islands / atolls did the Germans have some sort of postal service?
Many of the atolls are uninhabited, so the number of islands where German overprinted stamps were used must have been small.

All of the Marshall Islands had overprinted stamps
Did the Germans produce other overprinted stamps for other Islands they occupied?
Many European countries captured by the German had overprinted stamps Just wondering

I have no exact count, but think there were 10 colonies (counting Kiautschou and China as one). On top of that, there were some offices abroad, like Morocco. Also note that not all colonies were islands. There were a number in Africa (Togo, Kamerun, Southwest Africa and East Africa), some pacific possessions, mostly islands (Karolinen, Marianen, Marschall inseln, Samoa, Deutsch Neu Guinea) and China.

The Marshall Islands are in the Western Pacific.
The territory consists of 29 coral atolls and five islands, divided across two island chains Ratak (east) and Ralik (west).
The archipelago was part of the South Sea colonies of the German Empire between 1885 and 1914.
The largest island Jaluit formed the administrative centre.

(taken from the 1893 map 'Schutzgebiet der Marshall Inseln', published by Paul Langhans in 1897)

In order to secure postal traffic between the islands, the so-called ATOLIPOST was set up by order of June 25, 1902, so that letters between the distant atolls / islands and Jaluit were accepted and transported by the captains of the ships.

Occupation of the island of Nauru on November 6th, 1914 by the troops of the British Dominion of Australia gave German stamps with an Overprint G.R.I. and their new value in english currency.

I was intrigued by the reference to the SMS Möwe on the map.

My first thought was of the later WW1 merchant raider with the same name but the survey ship here was a German gunboat launched back in 1879:
