It stands for "Government". These are official stamps used by governmental agencies.
Thankyou, but just so I can understand this better, what Government Agencies would use these stamps, also were these stamps used before the stamps with OHMS and also is there alot of these stamps. I think everyone know I'm not from Canada so it is good to ask Thankyou
I have only just notice that some of the G on the stamps are different sizes like some are wider, thinner, alittle bit different, is there a reason for this Thankyou
There are differences in the "G"s but the standard Scott's does not list them. I don't have a specialized catalog for them but here is my 2011 Scott's listing for them. |It also mentions but does not list the perfin O.H.M.S. stamps of which there are many.
Hope this helps

Hi
The "G" overprints were used by various departments. The postage use was, for the most part, used by the federal government. There were also some provincial perforated government stamps as well. The federal "OHMS" perfins are listed in the Unitrade Specialized Catalogue of Canada and Provinces.

Bob, Scott lists three "G" type overprints in its Standard Catalog as shown in the image you posted.
