I wonder if anyone here collects stamps from breakaway regions like for instance Eastern Ukraine (Donetsk area) or Transnistria. These regions act as de facto independent countries even though they are hardly recognized. Often one of the first things such wannabe countries do, after designing a flag, is create stamps as a sign they are genuine.
In the past one would regularly see stamps from Katanga or South Kasai in worldwide packets and I wonder if the same will happen with these Eastern European "countries".

Does anyone know where to find a list of all non-recognized regions that issue their own stamps?

Katanga for one is listed by Scott.

Stampworld can be a good resource. I do not know how thorough it is.

Here is an example of Stampworld for South Kasai:

Other than that, when I find stamps from lands like you mentioned that are not in the catalogs, I do an internet search. Often you'll find a dealer's listings for the stamps.

As part of my single specimen or stamp for every country I do collect them, but not in quantity.

They are very interesting and some are rather legit and are postally used even if not UPU recognized.

To answer the question I do not know of any listing for just these areas exclusively.

Oh, I have a bad experience with Moldavian part - Transnistria, they have own stamps, but, my friend, who come back from there, have no luck on border crossing, and all cover he made for me, was taken by custom officials.
Regarding Donetsk, Lughansk .... now, they re-joined Russian Federation, and use Russian Postal system, before, they made own stamps, not recognized by UPU.
(some sample attached).
Probability exist, that Michel catalog will list them, but Scott is different matter, as Scott list some un-recognized countries, they (still) refuse to list Republika Srpska Krajina (short lived Republic, part of Croatia today).

...and because I mentioned that this territory, after referendum, joined Russian Federation, I will show here two CM (Carte Maximum) from this Regions, now on Russian postage stamps:

Americas
Confederate States Of America, 1861-65, from USA
Canadian Republic, 1869, from British Canada. Issued a single stamp
Republic of Cuba, 1st, 1868-78, from Spanish Cuba. Issued single stamp
Republic of Cuba, 2nd, 1895-96, from Spanish Cuba. Issued a set of 4
Mosquito Kingdom, 1894 from Nicaragua, "Mosquito provisional" in Victory issue of the 1c, 2c & 5c. Overprints are in red some black are noted for the 2c & 5c.
Liberal Government of Gen. Andres Caceres in Peru, 1884, Overprint of "De Oficio" on Scott #26. There was during Peru's Civil War just after the War of the Pacific with Chile ended. Caceres was elected in 1894 as President. Read On.
Aristocratic Republic of Peru in Tumbes, 1895, from Peru. Stamps only used Tumbes. These stamps are listed as Scott Peru #'s 129-33. Before the year was out this revolutionary government actually seized control of Peru until 1914.
Eastern-Nationalists Commission, Blancos Of Uruguay, 1897, Issued 3 stamps with portraits of 3 different Blancos that were killed in 1865. All stamps were 10c and lithographed in Montevideo by the firm of M. Pena.
Cucuta, 1900 from Columbia. Issued stamps Scott #'s 175-84 inscribed "United States of Columbia".
Tumaco, 1902 From Columbia. Liberal forces issued 2 stamps now listed a Scott #255-6 also noted in 1901 9 denominations issue from 1c to $5 by Postmaster Manuel E. Jimenez noted in Scott in state section of Columbia.
Guayana, 1902-03, from Venezuela, Scott listed.
Carapano, 1902-03, from Venezuela, Scott listed.
Marino (District), 1903, from Venezuela, Non-Scott listed.
Maturin, 1903, from Venezuela, Non-Scott listed.
Provisional Government of Paraguay based in Villa Del Piner, 1904, Issued single stamp now shown as Scott #112.
Provisional Government of Paraguay, Villa Encarnacion, 1904-05. When this town was taken by the said government the PO in town was cleaned out vacant of any stamps. so Minister Marengo, Overprinting stamps "Gobieno provisorio Ago. 1904". Scott notes after Scott #90 as fraudulent.
