I'm rattling them off off of the top of my head - marine mammals, Earth's physical features(mountains, lakes, volcanoes, waterfalls, etc.), gems & jewelry, rocks & minerals, VW Beetles, Statue of liberty, maps on stamps, stamps on stamps, desks, WWF, parrots, puffins, penguins, Americana, authors, U.S. presidents. I am sure I have missed some.
I am the Study Unit Coordinator for the American Topical Association and I get to read all 54 study unit journals. Now I have found that some of my topics are crossing over to what some of those study units collect and have started mini topical collections. For instance, as a result of reading the Christmas study unit journal, I now have a mini collection of Christmas birds on stamps. You name it, I collect it.

interesting thread, I am sure we will discover very amazing subjects as unusual as original. For me, I just started two new themes : the first one relates to the olive and olive tree, being part of the mediterranean basin, it is the cradle of this fruit, but it seems that in Argentina, USA and even Japan, it is also grown, what excites my quest to develop my presentation.
the second theme can be chauvinistic, I search everything issued on stamps of the world but comes to Algeria (flag, monument, sport, folks, fauna, etc....what else, everything philatelic relates to Algeria to far and near.

My Son started topical collecting when he got interested at 8.. Ships and sports. Now at 15 still on ships, rugby and popeye. He has me working on a couple side projects of Rotary and IGY stamps. Kinda fun and has kept his interest as he exhibits and comes to stamp shows with me.
My Current Collections include:
Farming, Archaeology, Space & Astronomy, David Livingstone & Related, Bicycling, Trains, Running, Tennis, Hockey, Figure Skating, Waterfalls, Lighthouses, Disney, Literary, Popular Television & Movie Characters, Christmas, The Vatican, Easter, U.S. States, U.S. Nat. Parks, U.S. Airmail & Related Postal, Chinese New Year, Chinese w/Prominent Chinese Writing, Oceanliners, Blocks, U.S. Flags, U'S. Liberty, WW depicting neighborhood scenes, Fishing, Fire Trucks & Firefighters, Maps on Stamps, Photography on Stamps, Elephants,
Some "topics" I collect because they are of interest of others. My oldest son is into hockey. He used to play for Disney Ice (Non Pro), at the Anaheim Pond (I don't know what its called today) The Ducks are our family team (we are from Orange County)
My wife is into "running" (NOT ME)
And my mother-in-law was born in Cuba, thought I'd do a little collecting in honor of her.
Chickens. I had a pet rooster, George, when I was a kid. Here's a picture of George, with his harem. George's wife was Lucy — she's the dark hen, a Rhode Island Red.

Astronomy. My son, Paul, and I enjoyed deep sky viewing with a Dobsonian telescope in the early 1990s. Here's a nice set from Tristan da Cunha:

With an emphasis on USA and Canada....but worldwide too including some covers/cards.
I collect too much....Red Cross Olympics(for the granddaughter) Canadian pictorial postmarks.... Postal History . and various kinds of cancels just to mention a few....
I collect Europa, Nato, EFTA, UN related: World Year of Refugees (1960), Freedom from Hunger, Malaria Eradication, Save the Nubia Monuments. rrr...
I have one tiny topical collection - Schnauzers
I have just begun a topical collection of Wine (but I'm not an oenophile). Haven't really decided whether to make it a thematic or a topical collection, and am also trying to decide how to produce pages for it. I joined the Wine on Stamps study unit of ATA in hopes of getting some ideas for how to proceed.
ATA? Don't recall ever hearing about it until you and Jeff mention it here. checking it out now...
Bats (winged beasts), horses (for my daughter), and militaria (uniforms, guns, tanks, battles, etc.)... none particularly seriously. It's easy for me to let the more expensive stuff walk. in 1991, I drooled at the plethora of Pearl Harbor issues from every country that ever heard of a dive bomber or saw an American, but let most just go.

A collector could truly break the bank if he or she bought every topical that fit into their collection, assuming that they represented common themes — planes, trains, ships, flowers, insects, birds, etc. I too ignore most of the modern military and aircraft topicals unless they uniquely represent one of my collecting areas, and they have be issued by a country that actually had some relationship to the topic, and then they have to be attractive! But there are exceptionsI
I don't think that Charles Lindbergh ever visited or landed in Samoa, but I just couldn't resist this souvenir sheet:
A member of my stamp club, however, has utterly failed in building a topical collection of stamps showing barber poles. The last time I inquired, he hadn't found a single stamp. His wife hasn't had much more luck with her collection of thimbles on stamps.
