Another country? Celebrating the NZ Challenge. Could a country name, NZ or otherwise have been omitted by error?
Possibly another country, yacht appears to be the NZ boat.

The New Zealand Challenge was a yatch racing syndicate not the name of the racing yatch.
In 1992 the New Zealand Challenge syndicate was defeated by an Italian syndicate in the Louis Vuitton Cup, basically a semi final of the America's Cup, held in San Diego, CA.
The winner of the Louis Vuitton Cup would next compete against the current holder of the America's cup.
I'm guessing this could be from any country that issued sports related stamps.
Not the answer but a little info from Wikipedia.
I see all that information in the captions on the photos that Vic posted as well.

I am beginning to think, in the light of what Jacques found, that this is a stamp from a miniature sheet that was never valid for postage. The 1.25 rate has never been issued or used as a postal rate by NZ post.
Guess this one got used and missed or maybe was just added to the envelope as an extra. Have not found the MS that this probably came from, but will keep looking.

The inscription GPPL appears on the corner of the item which Jacques has found on eBay.
From the Financial Times website, Gujarat Pipavav Port Limited is an India-based port company which handles seafaring cargo shipments. I would hazard a guess that the GPPL acronym refers to this entity which perhaps was a sponsor or advertiser for the New Zealand challenge yacht race in 1992.
In the Mowbray Postal Stamp Auction catalogue for Oct 1, 2013, under New Zealand Cinderellas, there is a listing for:
Lot 3009 1993 GPPL x 8 diff scenic m/s of 4 M-Unhinged Est. $20.
This would corelate with GPPL being an issuer or sponsor of souvenir sheets like the one Jacques identified and which are classed as cinderellas among dealers or collectors of New Zealand stamps.
In the same Mowbray auction catalogue there is a listing under Polar items as follows:
Lot 3042 Cover NZ 1991 $1.25 Scott Base local
This would suggest that the $1.25 denomination while not issued by the NZ postal authorities might have been a denomination in use for certain local purposes in the region.
My guess is there was likely a souvenir sheet issued as a cinderella “not valid for postage” for the 1992 New Zealand challenge similar to the one Jacques has found, and that your “stamp” is from that sheet.

Thanks Roger, but it is not a sheet that shows my stamp, I have not found an image of that yet.
Sorting stamps today I came across this $1.25 yacht stamp. Wording implies 1992. Unable to find in Scott, NZ website does not show a $1.25 value for any stamp.
