The one on the left is as listed in Scott, Orange and green.

The one on the right looks to be Carmine and deep forest green. Scott does not list color variations for this stamp. Do other catalogs do so?

This site has some great detail.http://www.southafricacollector.com/Identifying_South_Africa_Union_Definitives.htm
SG lists green and orange/or Vermillion but there are many shades.

At a quick look the left stamp is from the 1926 printing, the leg R of Africa is curved at the end.
The middle stamp is from 1931, the leg of R is straight, and the right hand stamp from one of the later printings, depending on size and frame specs.

Scott does actually list variations for this stamp, but it is based on design changes that were implemented over the years. It was in use for over 25 years. However, you will find some color changes in the later issues which are listed by Scott as 59 - 61c
Here is a chart that will show you the various options with the catalog numbers for these items.
