Is this color of stamp is a variety or the stamps exists in other color?

Both Stanley Gibbons #476 and Scott #415 list this as violet.
Maybe the colour has faded through soaking?

Very strange that the color is called violet. I checked on Stampworld and a dealers site. All of the stamps seem to have the same color as yours.

I suspect the colour is unstable and has a red component which has faded out in sunlight.

My copy looks the same. It isn't blue. You can see the difference if you place this stamp with a blue stamp. However, it isn't violet either. You can see the violet in the ink color, but I would call it more of a deep or dark violet. It's one of those shade things, but I do think it is mislabeled as merely violet.

If this was a German stamp I would say violet blue.

As per Lerivage post, the one we have, has color moved from violet to blue, it seems alteration due to light exposition

The Illetekbelyeg Katalogus - Hungary Specialized describes it as
Gray-Violet - the 5p as blue
Only 1 printing and no varieties
