Can anyone help me work out which variation this stamp will be?

There are 3 provisional overprint varieties of this stamp:

1. Harrison and Sons overprinting by photogravure.

2. Harrison and Sons overprinting by letterpress.

3. New Zealand Government Printer overprinting by letterpress.

How do you work out the difference between photogravure and letterpress?

Any help would be much appreciated.

Thanks Jill. Much appreciated. The site you found was very helpful. I think the stamp that I have is an example of the first option, the photogravure process, because under a magnifying glass the printing is very clean and even across the horizontal bars.
