You shouldn't need mounts when using stock pages that have plastic pockets. I use Lighthouse Vario stockpages. You might want to ensure the pockets are tall enough to fully cover the stamp (personally I don't like stock books that result in stamps peeking out partially above the pocket).
In addition, if you put your stock pages in a binder that also has a slipcase, then you are pretty well protected. The slipcase will help prevent dust from settling down into the pages and on the stamps or in the pockets.
Of course you should be concerned about other environmental conditions, such as high humidity.
As you are new to the hobby, you are very likely to be organising and reorganising your stamps until you settle on a format/style that suits both you and what you are collecting.
I do not know the "Lindner Omnia" pages you mention. But would recommend for you a stock book of some description to get started. I personally use 'Lighthouse' but I am sure there are plenty of others. Make sure you buy quality though, don't go buying those cheap chinese stockbooks of days past.
Even once you settle on a system, a spare stockbook will always be handy which is another good reason to buy one to start with. Also, err on getting a larger size. Like cupboards in a house, you can never have too much! And as 'HungaryForStamps' mentions, get a matching slipcase (for whatever album you get).

Are you referring to the stamps released only by the Confederacy?
If so, you shouldn't need a very large stockbook or album, as there were only 14 total CSA (Confederate States of America) stamps made by the Confederacy.

Ah! With only `14 stamps you will want to collect them on cover too. Covers of this era can be very interesting, especially when they include letters describing the conditions during the war or battle itself!
... and try to include at least one Confederate Wallpaper letter.

The pages you want to use are fine. They are pvc and chemical free. I use Vario which is similar. BUT be aware when using these pages, once you put a stamp in a spot on the page, to really keep that stamp as bought, don't take it out of that spot to put another stamp in its place. Use a new page. This is especially true for mint stamps but I still change pages even with used stamps (which if you are on a budget is what you'll be collecting for Confederates). Over time small traces of ink / postmark can transfer from the stamp to the plastic, then from the plastic to the next stamp. This has the potential to downgrade a stamp. Again, this is less important on used stamps to most collectors, but i feel it should be noted.

I had originally thought about using "6 pocket" pages, which are 43mm tall, and then using a mount strip as long as the page is wide, and put several stamps to a strip to separate the varieties........(if this is a workable idea, which mounts would you recommend?)
Since there aren't a lot of varieties in the CSA stamps, 3 or 4 pages should be plenty if my idea is workable(?) -

I collect cheetahs on stamps and #1's of the world.

I bought the paper for the pages at a printing shop - it cost me $14 for 100 pages, so 14 pages would be cheap.
You could use any kind of paper you like, as the mounts will protect your stamps on the page.
Nevertheless, this is just a suggestion/idea - you can display/store them any way that pleases YOU.

I am 65, newly interested in a modest collection of "Confederate" stamps, and I am seeking some specific advice about storage / display.
I had originally thought about a "Stockbook", but the different varieties, makers, and materials used left me with a headache over the daunting choices - lol
I have settled on using "Lindner Omnia" Stamp pages, and my specific question is this -
does one need to use mounts with this type of stock pages?, and if so, what is the best type for protection and ease of use? - (specifics PLEASE, I'm a "newbie" to this whole thing - lol)
